Pecan Cakelets

Pecan Cakelets:

Ingredients
1 cup chopped pecan
1/2 cup all-purpose flour
1 cup packed brown sugar
2/3 cup butter, melted
2 eggs

Directions:

Preheat oven to 350 degrees.
Combine all ingredients and mix well.
Spray a miniature muffin tin with non-stick cooking spray.
Fill each 3/4 full.
Bake in preheated oven for approx.
18 minutes.

I doubled the recipe and it makes LOTS. They are really really good. You can make larger ones and just bake them longer. They do not rise but are light and rich.
